Martinja cake
Ližnjan's “cake” is made for Martinja. This is a special type of bread made only for Martinja or for weddings. The special feature of the cake is its circular shape and decorations on the top. The joined ends are incised one over the other with a key. The cake is not sliced with a knife but broken with hands.
Ingredients:
1kg flour
1 yeast
1 tablespoon of sugar
5 dkg of fat or butter
1 dcl of milk
water
salt
a little brandy or rum
peel of one lemon
The recipe for the cake is as follows: mix the ingredients, a little fat or oil, flour, water, yeast and lemon zest, and vanilla sugar if you like. Knead it a little tougher than bread, shape it and place in the oven.
Busolade
Šišan’s specialty is busoladi, cookies made of sweet bread dough fried in hot oil.
Ingredients:
1kg flour
2 packets of yeasts (4g each)
sugar
1l oil
milk
water
salt
Preparation:
Pour the flour into a pile and make a hole in the middle, put yeast in it with a handful of sugar. Pour lukewarm water over the ingredients and let it rise. In one pot, put 1/2 l of water, a tablespoon of salt and a little milk (about half a cup) and 2 tablespoons of oil. Mix everything together until you get a compact mass. Then cut the dough into finger-sized pieces and join the ends. Arrange busoladine on a wooden board, cover them with a cloth and let the dough rise a little more. Put the rest of the oil in a larger pan and heat it on the stove. Fry busoladine until they become golden brown, then take them out and use paper towel to soak excess oil. Sprinkle them with sugar and serve.
